I just grabbed a spray bottle and did a 1 part white vinegar to 10 part water mixture. While the polycrylic was just a little tacky (mostly dry) I sprayed it lightly with the mixture and wiped it down with a clean clothe. It took the yellow right off and it has never returned.
Which is better Polycrylic or polyurethane?

The trick to using stain to reduce or eliminate yellowing is to use a pigmented stain, not clear. The pigment should be the same color as the natural wood color. Make sure to sand the polyurethane between coats. Sanding removes drips, bubbles and other uneven spots in each coat. Dry the first coat for a full 24 hours. If the coat feels tacky or sticky after that, let dry until it feels completely dry.

Do you sand after every coat of Polycrylic?
Yes. Apply the Polycrylic and allow each coat to dry for about two hours. Lightly sand with 220 grit sandpaper between each coat. Then remove the sanding dust.
Three coats are recommended. After final coat, allow 3 hours before light handling and 24 hours before normal use.
Recoating a water-based acrylic floor finish with oil-based polyurethane is an achievable project for a DIYer. Just make sure the old finish is properly buffed and you thoroughly clean the hardwood floors before applying the new finish.
