The price of $130 for five ounces of pour is reasonable. A minimum of $1000 is expected to be charged retail for Hibiki 21.
Whisky should be stored lower than room temperature, in darkness, and with the bottles standing up. Opened bottles should not be left with lots of air in them for too long. If not, you run the risk of the whisky being affected in negative ways.
Why is Hibiki sold out?
“In the meantime, due to supply constraints of certain aged whiskies, Hibiki 17 Year Old and Hakushu 12 Year Old will be discontinued in markets at some point after this year, and will have limited availability in the next few years.” Suntory Holdings apologised to whisky fans for the temporary discontinuation.

The taste of older Japanese whiskies is a powerful, memorable experience if you enjoy the richness of aged liquor. These whiskies are also fantastic collector's items and something that will last for years, so it's well-worth the investment.
Hibiki 12 was discontinued in 2015, so despite its status as the youngest of the line's age-statement collection, it's no easier to track down than its older siblings. The liquid itself exhibits an immediate woody note on the nose, with the brighter, more acidic notes relegated to a supporting role.
The bad news is that Japanese distilleries weren't anticipating such a boom. The result? Their aged stock is now running dangerously low, forcing some of the most well-known distilleries to discontinue sales of their aged product.
