In my recent efforts to incorporate more plant based recipes into my menu, I’ve found myself using vegetable broth more and more instead of chicken broth. I also found myself wanting to buy the low sodium version of the vegetable broth at the store. BUT, those low sodium options are always the most expensive option, something that goes against my frugal nature!
So, much like when I was buying the expensive low sodium cans of beans and finally decided it was time to just make my own low salt beans, I decided it was time to make my own no salt vegetable broth. After all, it’s just vegetable flavored water – I think I can make my own!
How To Make Homemade Vegetable Stock
Homemade vegetable broth (what is also sometimes called vegetable stock) is really more of a process than a recipe. And for those who want to be really frugal, it can often be done with the odds and ends and leftovers of vegetables that you can keep in the freezer until it’s time to make your own vegetable broth. Basically you put some vegetables and herbs in a large pot, add some water, simmer for a while, and you’ve got homemade vegetable broth!
For my homemade vegetable broth I opted to use onions, carrots, and celery as they’re the classic flavoring combination of vegetables that are often used in soups.Larger chunks of vegetables work OK for this method and only a quick rough chop is needed. I used two onions, two large carrots and three stalks of celery, although the next time I do this, I think I’ll go a little heavier on the carrots and a little lighter on the onion. All of these chopped vegetables are then dumped into a large pot.
For some extra flavoring I added some fresh parsley and thyme, and a small palmful of peppercorns to the pot too (but no salt because I’m keeping things low sodium).
Next, you just add water to the pot. You want enough water to cover the vegetables, plus a little more so that you can stir the vegetables around in the water.
Once everything is in the pot, place it on the stove and heat it up. Bring it to just under a boil so that everything is nice and hot and steamy. Then turn the heat down lower and let it simmer for about an hour, giving things a stir every once in awhile.
This is part of what makes this recipe so easy to do. While it was simmering for an hour I went out and did some yardwork and every so often came in and stirred things around a bit. So not only is it a frugal recipe, but you can be productive and doing other things while it’s cooking too!
At the end of the hour the water in the pot will be lightly colored from the vegetables and will also have taken on the vegetable flavors. Remove the larger chunks of vegetable with a slotted spoon. The remaining liquid will probably have to be strained because of the fresh herbs floating around. I lined my colander with coffee filters for this step, but it took a long time for the broth to funnel through!
Storing Your Homemade Vegetable Broth
I ended up with about 9 cups of vegetable broth using the process described above. I put about three cups into a canning jar to keep in the refrigerator for (hopefully!) using up in the next couple of weeks.
I divided the rest of the broth into plastic freezer containers (about 2 cups in each container) and put them in the freezer for using up over the course of the next few months.
So once again, it looks like there’s a homemade solution that’s easy to do and will save me the cost of those expensive low-sodium options. If you’ve been reaching for the high priced low-sodium vegetable broth on the shelf too, why not give this method a try? If you can stir vegetables and water around in a pot, you can do it!

Vegetable stock likely comes unseasoned, while broth usually contains salt and other seasonings. Vegetable stock is made with untrimmed, sometimes whole vegetables, while broth is made from trimmed, roughly chopped vegetables.
I start by sautéing the sturdier vegetables down until soft and tender. Then I add water, salt, pepper, and herbs. Herbs add the “umami” to the soup, in my opinion. I went with fresh thyme, parsley, and rosemary and a bay leaf for good measure.
This is a great, classic Vegetable Stock recipe that's easy to make. It's an essential in every kitchen, and will make anything you use it in tastier. As with all homemade stocks, it's far superior to store bought! Naturally this is a perfect substitute for vegetarians and vegans whenever a meat stock is called for.
Consuming stock may have various health benefits, including: Improving sleep: Stock and bone broth both contain the amino acid glycine. A 2015 animal study found that oral administration of glycine helped promote sleep in rats. Weight loss: A cup of chicken stock contains more protein than a cup of chicken broth.
But if you keep an eye on sodium levels, both broth and stock can be healthy. Taub-Dix notes that stock is often considered healthier than broth since it tends to be slightly higher in protein and other nutrients, including vitamins and minerals, than broth.
“Flavorless” Vegetables – like zucchini or white potatoes; these aren't going to do anything bad to the broth, but they're not going to help it either.
Cruciferous Vegetables – such as broccoli, cauliflower, brussels sprouts, and cabbage.
Avoid bitter greens and members of the brassica family (kale, cabbage, Bok Choy). Other greens can be used in small quantities. Good in small quantities (no more than 1/5 of the stock ingredients). Foods in the Brassica family, such as kohlrabi, are too strong for stock/broth and can impart a bitter taste.
Some vegetables just don't taste great in a stock! Cruciferous vegetables will get funky tasting, and seemingly mild vegetables like zucchini, green beans, and bell peppers can get bitter if simmered for too long.
Cooked vegetable broth typically lasts around 4-5 days in the refrigerator when stored properly in an airtight container. As for its uses, vegetable broth can be incredibly versatile! You can use it as a base for various soups like hot vegetable soup, minestrone, or noodle soups.
Vegetable broth will last 7–10 days with proper refrigeration. You can use it as a base for any kind of soup, sure. But you can really use it in place of water, when water is called on for anything.
The expired broth will smell unmistakably sour. If you are worried about your broth going bad after you've opened it, or want to store your soup or stew in the refrigerator, Nebraska's Institute of Agriculture and Natural Resources advises storing it for only three to four days in the fridge.
Be mindful of the costs associated with adjunct flavors like salt, pepper, bay leaves, and other spices. They're all great additions, but not necessary if you don't already have them on hand.
Once the broth is cool, you can store in an airtight container in the refrigerator for up to a week. To store for a longer period of time, you'll need to freeze the broth.
As a result, stock is usually a healthier product, delivering a richer mouth feel and deeper flavor than broth. Stock is a versatile culinary tool that can deliver taste to any number of dishes. Darker in color and more concentrated in flavor than broth, it's ideal for use in soups, rice, sauces and more.
Simmering a good-quality chicken with its bones and a handful of aromatics like onions, carrots, and celery transforms the contents of your pot into nothing short of liquid gold: a richly flavored, lip-smacking broth that takes risottos, soups, and stews to their most delicious potential.
Vegetables will not have much left to give after being used for stock, you can still eat them but they may not be flavorful or nutritious. Unless you're making a stew you're going to be cooking the stock, then removing the vegetables, then cooking the stock more with other ingredients.
